Peel off the skin.
Cut into strips, put in a big bowl, soak in boiling water until cold, twist dry water, pour boiling water again, soak overnight, change cold water three times in the middle.
Twist the water hard and disperse.
Put more water and sugar in the pot.
Cook over high heat until sugar melts. Change to low heat.
Cook over low heat until sticky silk (many bubbles)
Turn the dried grapefruit peel upside down and stir-fry.

Eat in a big dish.
